Description

In Pakistan and North India semolina is called sooji, and in South India, rava. Semolina is used to make savory South Indian foods, such as rava dosa, rava idli, rava kitchri and upma. It is used to coat slices of fish before it is pan-fried in oil. Rotis can also be made from semolina. I recently read that rimacinata is for leavened things and normal semolina is for pasta. The latter, semola di grano duro, gives a coarse surface that allows the sauce to "marry" with the pasta better. Any thoughts? Fiber may support heart health by lowering LDL (bad) cholesterol, blood pressure, and overall inflammation. A small 3-week study observed that eating 23 grams of fiber per day from whole grains like semolina reduced LDL cholesterol by 5% ( 19, 20, 21, 22).

Because semolina gets its color from golden durum wheat grains, you may confuse it with cornmeal. But semolina is not gluten-free. It’s not good for people with medical conditions that are linked to gluten and wheat, even if it is a good ingredient for pasta. Gluten-Related Health Conditions Iron deficiency is the most common micronutrient deficiency worldwide. Increasing your intake of iron-rich foods may lower your risk of deficiency and subsequent anemia ( 37, 38). Semolina flour is a coarse flour made from durum wheat, whereas semola flour is a finer flour made from the same type of wheat. Also known as whole wheat flour, this darker, coarser flour contains the full wheat kernel (the bran gives whole wheat flour its signature brown look). Often, cooks will mix whole wheat flour with more refined soft wheat flour to achieve a balanced, earthy dough for bread, piadina, and yes, even pasta. Semola di Grano Duro and Semola Rimacinata The semolina, however, has a more yellowish colour, thanks to the antioxidants within, and a more granular and coarse texture, characterised by a low refining of hard wheat. For this reason, semolina has a lower glycemic index, a higher fibre content, and is more easily digested.
