About this deal

This recipe is my version of an izakaya style "Addictive" salty cabbage. It's a 5 minute dish which is very cheap and easy to make, I highly recommend it! What does "yamitsuki" mean in Japanese? First, it’s aged with rice koji. Then it’s smoked using aromatic cherry wood chips. Other ingredients include miso, rice, sugar, kelp extract, and nigari.

Making iburigakko is a multi-step process. The daikon is first smoked and dried over irori (open hearth fires) for up to two days. Oak or cherry wood is used for its unique and fragrant aroma.

Dry ager filled with fish Joseph Weaver What inspires the omakase menu? Walk us through what guests can expect. The spear squid is grilled at 60 degrees, with a knife inserted in parallel on the surface and crushed sesame seeds sprinkled. The white vinegar rice would be used for raw squid, but because it is grilled, the red vinegar rice is used instead. If you're in Japan, the best option I recommend is "spring cabbage (春キャベツ)," harvested during springtime. When I lived in the UK I used to use a type called "Sweeheart cabbage" (also known as pointed / hispi cabbage or sugarloaf). Other ingredient ideas to customize the flavour And every sake I tried worked. But the winner was a savory and ricey junmai. And a slightly savory junmai ginjo was runner-up.

A sushi craftsman who has inherited the genealogy of the famous Sushisho in Yotsuya, Mitsuhiro Hokayashiki wields his skills at this establishment, combining with the unique sensibility to entertain guests. With thorough attention to detail, such as the three types of vinegared rice used depending on the sushi ingredient, the excellent omakase course provides a pure enjoyment in its semi-hidden location in Aoyama. The word that can also be seen in the name Cheese Tara, “Tara (鱈/たら)” means “cod” or “codfish” in Japanese. This product is a type of tsukudani made in Aichi by Hiramatsu Foods. Japanese sardines (iwashi) simmered for three days in traditional teriyaki. I worked in closely with AvroKO to design the space and we drew inspiration from the 1970 Osaka Exhibition — an architectural movement exploring futurism, primary colors, and adaptive design — as well as the spirit of acclaimed architect, Frank Lloyd Wright, to create an East-meets-West aesthetic. We used warm shiplap and plank wood paneling throughout the space to highlight angular geometry and red, yellow, and blue pops of color.

How to Interpret and Order from a Japanese Menu

Cabbage types can differ based on where you live, but for this no-cook dish, I recommend using soft, green cabbage that is suitable to use raw instead of white, red, or napa cabbage.
