About this deal

I’ve used Bob’s Red Mill Gluten Free All Purpose flour in cookie recipes before (though not this particular recipe) and have always had great results.

Nistisima means fasting food – food eaten during Lent and other times of fasting observed by those of Orthodox faith. Thank you Kiki, I’m making my first batch tonight (with the almond meal as mentioned, and “plain” flour! Not only is Delicious consistently the best food publication out there, my personal history there makes it such a special place to me.Tambouli salad, also written as tabouli or tabbouleh, is a refreshing parsley salad, which is made with bulgur wheat tomatoes, onion, cucumber, fresh mint and dressed with extra virgin olive oil and lemon juice. Note: Avgolemono needs some time to thicken, so it’s better leave it for at least half an hour before serving.

I want people to understand the idea, but if they just wanted inspiration for lovely recipes, then the book could work for that, too. However it got me thinking about how people think of Greek and Cypriot food as ‘meat heavy’, which, of course it isn’t. I’m pretty sure that you could switch them out but I would have no idea how to calculate that substitution. Roll out your dough and create your log on top of the sesame seeds; this way they will get embedded in the dough.I made a YouTube channel about 50 million years later than the rest of the world and put them all on there. Here is the personal variation: switched 1/2 of the flour with whole wheat and a couple of tablespoons of wheat germ. but I also remember eating Mujendra in Nicosia in Cyprus in a tiny cafe in the sunshine served by what looked like two aunties in aprons! If you are going to use the sesame seeds, spread some of them on the counter or cutting board (wherever you will be rolling your koulourakia).

During the period of Saracosti the faithful fast for a period of 48 days and not 40, as it is falsely believed: the six weeks of Lent and Holy Week. And thanks for the feedback; we always hope that videos, pictures and notes will help (along with the recipe of course). I fast, and there are many people who do it just because they want to have familiarity and connection with their ancestors, their relatives or smells from home. Lahanodolmades me avgolemono is a rustic Fall / Winter Greek dish with cabbage leaves stuffed with ground meat and rice in an egg-lemon sauce.

Through fasting, we also learn to feel compassion for the poor and hungry and to save our own resources so that we can help those in need. During the Greek Orthodox Fasting period, meat and animal products (cheese, milk, butter, eggs, lard),fish (meaning fish with backbones),olive oil and wine (all alcoholic drinks)are not consumed during the weekdays of Great Lent.
